What's cookin' this week

Hey Reader,

Weather here in Victoria, BC Canada is warming up and those grey days are getting farther in between, now that Spring is in full bloom.

I don’t know about you, but the second the weather even hints at being nice…

I start craving salads.

Which is funny, because if you’ve been around here for a bit, you know my usual go-to is soups and stews. Cozy, comforting, throw everything in a pot and call it a day.

Homemade Salads?

They’ve always felt a little… underwhelming.

Like yes, technically healthy. But also kind of boring. At least the way I've been approaching them (more as an after thought really).

So this week I decided to step up my salad game a bit. Because I want something fresh and light, but still filling and actually worth making again.

Here are a few we’ve been loving lately:

  • Easy Caesar Pasta Salad - This one is a solid crowd-pleaser. Creamy, familiar, and super quick (make in only 20 minutes).
  • Mediterranean Orzo Salad - This one may be familiar, as it is hands down our youngest daughter’s favorite. Which honestly makes this a regular go-to in our household. It’s simple, filling, and works for lunches or dinner.

Tips for Salad with Kids

One thing that’s helped a lot with salads and my kids over the years…

I don’t build the salad for them.

Instead, I put everything out deconstructed - separate bowls of ingredients, toppings, extras. They can pick what they want, skip what they don’t, and everyone is happier.

I always make sure there’s at least one or two things for the salad they’ll eat no questions asked.

Plus put out a dressing they like. As for some reason a salad drenched in their favorite dressing (with copious amounts of bacon bits), makes it more enticing and edible.

That way they get something they enjoy, and we still get the kind of salad we actually want.

Everyone wins.
