Happy Friday!

I hope you're week has been going better than mine...

3 ER visits, and two doctor visits later for my elderly mom, and I am ready to skip seeing the inside of medical facilities for quite awhile hopefully. She ended up having pneumonia, but after some antibiotics is on the mend and feeling wayyyyy better.

If there’s one thing I always keep in my back pocket for busy weeks, it’s a really good pasta salad.

They’re quick.
They work for dinner, lunches, BBQs, or even camping and road trip snacks.
And honestly… they taste even better the next day.

So today’s Foodie Friday is all about pasta salads you can throw together without much fuss.

This one is creamy, crunchy, smoky, and just a little bit indulgent. The bacon and cheddar combo makes it a huge hit with kids and adults. It’s a great side dish but also filling enough to turn into lunch the next day.

3. No-Fuss Italian Pasta Salad​
When you need something simple and crowd-pleasing, this is the one. It’s colorful, quick to prep, and perfect for potlucks or weeknight dinners.

4. Easy Mediterranean Orzo Salad​
Light, fresh and filling, this is the one pasta salad my family and I could eat almost every night of the week. In fact we may this week!

All the Greek salad flavors, but a bit heartier with the orzo and chickpeas. Plus it works great as a side dish or topped with grilled chicken for an easy dinner. We always add extra kalamata olives and feta cheese, because we're like that.
